It’s cool, grey and damp outside and I am dreaming of toast; the hot buttered type, plain and simple. However, if we’re dreaming we may as well dream big so here’s a little toasty inspiration.

I rather like the sound of this one at tea-time – Carrot Cake Toast! made with shredded carrots, vanilla infused lactose free cream cheese, (I would go for Philly), walnuts and a sprinkle of cinnamon sugar.

For a lunchtime savoury I wouldn’t mind this – red pepper, corriander, lemon zest, crushed red pepper and a little ground pepper too, on a pile of cottage cheese.

Runners World recommends this for breakfast – looks delicious and not too tricky,

and the same goes for this one – here’s the recipe: Mix 1 mashed avocado, 1 chopped garlic clove, 1 tsp chipotle paste, juice of half a lime, and salt. Spread on a slice of granary toast. Top with black beans, chopped red onion, diced mango and coriander.

Talking of avocados – I like the look of this bejewelled slice.
